Fried Catfish Recipe
Ingredients
4 catfish fillets
1/3 cup milk
½ cup cornmeal
1 large egg
½ cup flour
2 teaspoons salt
1 teaspoon pepper
½ teaspoon cayenne pepper
lemon wedges (if desired)
vegetable oil
In bowl combine cornmeal, flour, salt, black
pepper, and cayenne pepper. In separate bowl, with a fork stir together the
milk and egg. Heat a ½ inch of vegetable oil in a skillet. Oil should be
about 350 degrees. Dip catfish in egg and cover with cornmeal, flour
mixture. Place fillets in skillet and cook about 5 minutes on each side or
until fish turns a golden brown color. Remove and drain on paper towels.
Southern Fried Catfish Recipe
This recipe makes a large batch of batter for friend
catfish that is easily stored in the freezer for future use. Frying outside
is recommended as the smell of fried fish may linger.
Ingredients
2-3 catfish filets per person
1 ¼ pounds of corn meal
3 ounces of cayenne pepper
2 teaspoons garlic powder
4 ounces of dry mustard
¼ cup salt
1 tablespoon black pepper
egg
peanut oil
In large bag or bowl mix together corn meal,
cayenne pepper, garlic powder, dry mustard, and salt. In a deep fat fryer
add peanut oil. Must have at least enough to fully cover fish. Heat oil just
to the point of smoking. If it starts to smoke turn the heat down. Dip fish
in whisked egg and dip in cornmeal mixture. Drop into oil. When fish turn
golden brown and crisp they are ready to serve.

Catfish with Cheese Recipe
Ingredients
2 pounds of catfish fillets
1 can of tomato soup
2 green onions
½ teaspoon salt
½ teaspoon pepper
1 cup cheddar cheese grated
Place fillets in greased oven safe pan. Mix
soup, onions, salt and pepper. Pour mixture over fish and cover with grated
cheese. Preheat oven to 350 for 25 minutes.

Catfish Recipe
Ingredients
2 pounds catfish fillets
½ cup cornmeal
½ teaspoon pepper
1 teaspoon garlic salt
1 teaspoon chili power
½ cup bread crumbs
1 teaspoon paprika
½ cup ranch dressing
Mix cornmeal, bread crumbs, chili powder,
garlic salt, paprika, and pepper. Dip the fish in the dressing and allow
excess to drip off of fish. Coat the fish with the breading mixture. Preheat
oven to 450. Place fish on a greased baking sheet and bake fish for 15 to 20
minutes.
This baked catfish recipe may also be used as
a batter for frying.
Blackened Catfish Recipe
Ingredients
4 catfish
fillets
½ pound bacon
2 teaspoons garlic powder
1 teaspoon thyme
1 teaspoon black pepper
2 teaspoons white pepper
2 teaspoons crushed fennel
2 teaspoons crushed rosemary
2 teaspoons chili powder
2 teaspoons lemon pepper
2 teaspoons cayenne pepper
½ teaspoon salt
1 teaspoon allspice
1 teaspoon oregano
Fry bacon to render out the grease. Remove the bacon
from the grease and use the grease to fry the fish. Mix all of the dry
ingredients and then coat fish. Bacon grease should be hot but not smoking.
Cook catfish until they break apart easily.
Cajun
Catfish Recipe
Ingredients
2 pounds of catfish fillets
2 ½ ounces of hot pepper sauce
1.5 cups strawberry jam
½ cup red wine vinegar
1 tablespoon soy sauce
¼ cup cocktail sauce
1 clove of garlic chopped
2 tablespoons horseradish
pinch of salt
pinch of pepper
3/4 cup cornmeal
3/4 cup Flour
1/2 cup vegetable oil
Mix salt, pepper, and hot sauce in bowl. Place
catfish in mixture to allow the fish to marinate for at minimum 1 hour in
the refrigerator. Overnight allows hot sauce to penetrate fish. In a
saucepan over low heat stir strawberry jam, vinegar, soy sauce, cocktail
sauce, horseradish and garlic. In a plastic bag combine cornmeal and flour.
Place catfish in bag and shake to coat fish. Heat oil in large skillet on
high heat, oil should not smoke, if it begins to smoke turn the heat down.
Place catfish in oil and fry until fish is golden brown. Serve catfish and
sauce together.
